The company Deplanche-Lauberye is managed by two first-rate specialists, René Deplanche (President and Chief Executive Officer, 49 years old) and Jean-Claude Bors (Chief Executive Officer, 44 years old). For the former, originally from Paris, the business is a family concern. His father Gabriel used to be a trader back at the Halles de Paris, before becoming a shareholder in 1971 with the business's arrival at Rungis. Unfailingly even-tempered, René Deplanche joined the company following economics studies and his military service – first as a counter assistant before being upgraded to assistant-vendor with his father.

"I replaced my father on his retirement and became company shareholder in 1977-78, and then President and Chief Executive Officer on the departure of Mr Charrier. Deplanche-Lauberye resulted from the 1971 merger of the two entities created after the Second World War. Deplanche was established by Mr Deplanche, my father's older cousin. The Lauberye company was directed by Messrs Béré and Lafeuille. We kept the name Deplanche-Lauberye for its good reputation and "top-of-the-range" image as regards the meat breeds it deals in (Blonde d’Aquitaine, Charolais, Aubrac, Limousin, Parthenaise, etc..). Our company has a team of eighteen staff including a quality control specialist, and we work solely with traditional high-quality butchers; we presently have about 200 customers. We guarantee them a consistent quality product. Our meats come exclusively from selected breeding farms that have become our exclusive suppliers. Well before the BSE crisis, we had already set up a traceability system; we are certified to European standards and also have HACCP certification". Jean-Claude Bors was born near Laguiole (Aveyron), into a farming family.

Following a BEPA (Vocational Studies Certificate in Agriculture) and a BA in agriculture, he moved to Paris in 1985 not having found work in his own region. He worked at the Paris markets during the day and spent the nights at Rungis working as a cutter, first at Bonnand and then at Deplanche-Lauberye as from 1988. Dynamic, hard-working and with an excellent knowledge of meat, Jean-Claude Bors rapidly moved up the ladder, replacing Mr Charrier in Sales before becoming in turn associate and then Chief Executive Officer. "This business captivates me, even more so now I have a thorough grounding in the whole sector from breeding to sales. Two thirds of our sales are made on the Blonde d'Aquitaine, an exceptional high-quality meat. Next comes the Charolais, Aubrac, Parthenaise and other meat breeds, i.e. 40 metric tons of carcasses per week. We don't sell label products but mostly the BRV (beef breeds). Our suppliers (breeders and slaughterhouses) and our customers are all certified, such as the excellent company Ledantec in Paris (15e). We have committed ourselves to our own inimitable approach and market our products under three band names: Saveur Blonde for the Blonde d’Aquitaine, Les Mountagnolles for Aubrac, Flaveur du Bocage for Charolais. We work the carcasses ourselves and offer our customers a "cut to order" service. We also import from Ireland and Belgium, but this does not amount to more than 5%" For both these men "Rungis has become a highly efficient tool, a place where butchers can find the quality products they seek, as Rungis epitomises top-quality meat products"
