Producers’ pavillion : a celebration of seasons

The Producers’ pavillion is a place of rhythm and harmony. As seasons come and go, you feel the change when you enter because it is never the same. The Producers’ pavillion wears time’s colours, and moves to the beat of nature.
It starts off all green in winter, the pavillion's favourite colour; then it turns slightly pink in spring with the arrival of crunchy radishes. With summer’s heat, it becomes frankly red, with juicy tomatoes, red peppers, strawberries and raspberries, accompanied by new fragrances such as dill, basil, thyme, savory, lemon balm, coriander or marjoram. While fresh autumn winds urge us to stay home, it is comforting to see lovely round apples, pumpkin and all the other squash varieties. Then winter comes around again and all is green.
For everyone who comes here, the Producers’ pavilion offers an ever-changing festival of colours, scents and freshness. With its quality products, the Floor pays homage to the earth’s colours and the treasures it contains.

In winter as in summer, people come here looking for prices

In winter, the Producers’ pavillion empties. Lots of producers won’t be back before spring. One thing is sure, though, regardless of the season : buyers and restaurant owners know very well that the Producers’ pavillion is where you find the best prices. You are in direct contact with the producer, who knows best how to adjust prices according to the season, output, and the vagaries of the climate.
Products to be found on the Producers’ pavillion from December to February: You’ll find “transformed produce” in every season: creamy watercress soup, watercress mousse, watercress appetizers, jams made from apples, pears and other fruit, apple juice, chicory jam and organic products (varieties of fruit and vegetables are available all year round).
Brussels sprouts, red endives, "sugarloaf"chicory, dandelions, Belgian endives, watercress. The fruits include Comice, Bartlett and Passe Crassane pears, as well as Akane, Bertane, Boskoop, Braeburn, Calville, Cox’s Orange, Cybelle, Elstar, Freyberg, Fuji, Golden, Granny Smith, Idared, Jonagold, Jonagored, Jubilee, Melrose, Pink Kiss, Royal Gala and Suntan apples. The potato varieties include Amandine, Anabelle, Anaïs, Belle de Fontenay, Cherie, Desiree, Francine, Kador, Pompadour, Roseval, Spunta, Victoria and purple potatoes.

New ideas and flavours to celebrate spring

After the harshness of winter, we need to eat something crunchy. This is the moment to go hunting for new flavours on the Producers’ pavilion.
Nasturtiums or borage flowers, radishes, mixed salads, fresh rhubarb, white or brown cultivated mushrooms, etc. The producers from Ile-de-France join forces with buyers and restaurant owners who buy face to face, to find unusual ideas and tastes for unique recipes. Produce to be found on the Producers’ pavillion from March to June : asparagus, cardoon, spinach, nasturtiums, white onions, baby carrots and turnips, radishes, rhubarb, etc. The lettuces include Batavia and red Batavia, loose leaf and mixed oak leaf, baby lettuce, lettuce, red lollo, mixed salad, baby romaine, mizuma, red Swiss chard, baby red mustard, romaine, arugula, rougette, scarole and sucrine.
For aromatic herbs, spring heralds the arrival of dill, basil, borage, chervil, chives, coriander, bay leaves, mint, sage, thyme, lemon thyme and all edible flowers. There are also brown and white cultivated mushrooms.

Guaranteed freshness regardless of the heat

On the Producers’ pavillion, the key word is freshness, whatever the season! It’s an important policy, which is much appreciated in summer when temperatures can soar.
Some buyers come at dawn to examine the produce and give their orders. The producer then calls up the farm which immediately organizes another harvest depending on the order. The order is then delivered to the desired location before midday. This is a plus that restaurant owners appreciate because it means they can serve products in perfect condition.
Products to be found on the Producers’ pavillion from June to September: Red beetroot, celeries, cauliflower, cucumbers, round and long courgettes, red shallots, courgette blossom, French beans, broad beans, yellow and red onions, sweet peppers, tomatoes and cherry tomatoes.
The lettuces include watercress and all the other varieties available in spring. Among the fruit you’ll find tomatoes and cherry tomatoes, blackcurrants, Montmorency cherries, wild strawberries, raspberries, melons, blackberries and other red fruit. The aromatic herbs include all those available in spring plus tarragon, marjoram, lemon balm, oregano, sorrel, curly leaved and common parsley, rosemary, savory and verbena. The potato varieties include Amandine, Annabelle, Anaïs, Belle de Fontenay, Cherie, Roseval and Sirtema.

Traceability and human contact are present in every season.
When you come to order at the Producers’ pavillion, there is complicity with the producers, who love to talk about their products, but also know how to prove their origin and traceability. Guaranteed local produce that reflects each season’s best, and a professionalism that blends ancient tradition with modern techniques.

Products to be found on the Producers’ pavillion from September to December

Carrots, white and red cabbage, turnips, pumpkin and other winter squash, endives and still most of the lettuces available in summer.
The fruit include mirabelles, plums and greengage.
The pear varieties include French Butter, Comice, Conference, Guyot, Louise Bonne, Passe Crassane, white and red William.
The apple varieties include Akane, Bertane, Boskoop, Braeburn, Calville, Cox’s Orange, Cybelle, Delhar, Elstar, Freyberg, Fuji, Golden, Granny Smith, Idared, Jonagold, Jonagored, Jubilee, Melrose, Pink Kiss, Reine des Reinettes, Royal Gala and Suntan.
All the herbs already cited are available until November.
The potato varieties include Charlotte, Desiree, Francine, Ostara, Pompadour, Samba, Spunta, Victoria and purple potatoes .
