Who-does-What Meat Products
The meat wholesalers joined their colleagues from other sectors at Rungis in 1973. There have been many changes since then.
Standards have improved, food safety has been reinforced, the sale is now structured, pavillions have been modernized, market demands have risen and many services have been added.
The meat products sector includes :
- 1 carcass meat pavilion, V1P
- 2 pork pavilions, V1M and V2M
- 1 poultry and game pavilion, V1G
- 1 tripe pavilion, V1T
- 8 warehouses
- 4 support service buildings (ancilliary, equipment...)
Carcass meat pavilion (V1P)
Inaugurated in 2001 after a complete renovation, the V1P pavilion, with its 180 m central buyers walk, blends modernity, safety and quality. The supply, acceptance, weighing, first and second cut and sanitary control procedures are done directly at wholesalers’ stores, to guarantee perfect traceability.
Pork pavillions (V1M and V2M)
Pork cutting is one of Rungis’ great specialties. - In a pig, 1/4 of the meat is consumed fresh (chops, ribs, roasts), the remaining 3/4 are transformed into cured, smoked, dried, raw or cooked meats. - Cutters and wholesalers of processed and cured products are complementary and supply most local authorities, scin Ile-de-France. - Over 20,000 hams leave every week to be turned into cured products like sausages or cooked and raw ham. A daily quotation gives the trade the latest trading prices.
Poultry and game pavilions (V1G )
Full-time quality standard in this pavilion!
You will find all top quality products here, such as Bresse poultry or raw foie gras. The sector’s latest innovations can also be seen in the new cuts, transformation, nuggets and even complementary products like sauces. During the hunting season, the highly controlled and sanitized game processing centre proposes rare, sought-after products like wild boar, wild game, etc.

Tripe pavilion (V1T )
Tripe is a specialty of French gastronomy.
In Rungis, the wholesalers trade in a pavilion that satisfies European health & safety standards to the last detail (HACCP method, clean circuits, etc.). The pavilion groups 12 wholesalers with separate, clearly identified stores.
MECARUNGIS, – long live technology !
The central cash desk is a special feature of the V1P pavilion that simplifies transactions between customers and wholesalers. Companies in the pavilion are connected to the central cash desk via a computer system, which means that customers can shop with several suppliers and just settle everything in one bill. At the same time, centralized databanks provide wholesalers with a guarantee of the customers’ solvency, payment terms, etc. Technological developments constantly enhance the system’s functionalities. All product data is stored on computer to guarantee perfect traceability. This tool reassures everyone and makes life a lot easier.
